Ingredients: Crust:

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour

Filling:

  • 4 large eggs
  • 2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 cup fresh lemon juice
  • Zest of 1 lemon
  • Powdered sugar, for dusting

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking pan.

  2. In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.

  3. Gradually add the flour and mix until the dough comes together.

  4. Press the dough evenly into the prepared baking pan.

  5. Bake the crust for 15-20 minutes, or until lightly golden.

  6. In another bowl, whisk together the eggs, granulated sugar, flour, lemon juice, and lemon zest until well combined.

  7. Pour the lemon mixture over the baked crust.

  8. Return the pan to the oven and bake for an additional 20-25 minutes, or until the edges are lightly golden and the center is set.

  9. Allow the bars to cool completely in the pan before cutting into squares.

  10. Dust the bars with powdered sugar before serving.
