Ingredients: Crust:


  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter, cold and cut into small pieces
  • 1/4 to 1/2 cup ice water

Filling:


  • 6-7 cups peeled, cored, and thinly sliced apples
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice

Instructions:

  1. In a large bowl, whisk together the flour and salt for the crust. Add the cold butter pieces and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
  2. Gradually add the ice water, a few tablespoons at a time, and mix until the dough comes together. Divide the dough in half and shape each half into a disk. Wrap the disks in plastic wrap and refrigerate for at least 1 hour.
  3. Preheat the oven to 375°F (190°C).
  4. In a large bowl, combine the sliced apples, sugar, flour, cinnamon, nutmeg, and lemon juice for the filling. Toss until the apples are coated.
  5. On a lightly floured surface, roll out one disk of the chilled dough into a circle large enough to fit into a 9-inch pie dish. Place the rolled dough into the dish and gently press it into the bottom and sides.
  6. Pour the apple filling into the pie crust, spreading it evenly.
  7. Roll out the second disk of dough and place it over the filling. Trim any excess dough and crimp the edges to seal the pie.
  8. Make a few slits on the top crust to allow steam to escape.
  9. Optional: Brush the top crust with milk or beaten egg and sprinkle with sugar.
  10. Place the pie on a baking sheet to catch any drips and bake for 45-55 minutes, or until the crust is golden brown and the filling is bubbly.
  11. Allow the pie to cool for at least 2 hours before slicing and serving.
